Chal­lenges Keep You Sharp

Hi all,

Hope you had a great day! My day started with a quick 10k on the tread­mill, keep­ing as fast a pace as pos­si­ble for the dura­tion, save for the 8 minute warm-​up. I’m plan­ning on run­ning the Toronto Half Marathon in May so long as I can keep my hips in good con­di­tion. They tend to get unhappy around the 15k mark but we shall see. I’m tak­ing the train­ing slowly, with just one long run/​week and increas­ing my mileage grad­u­ally. I’d like to do a few triathalons, hope­fully olympic dis­tance in the sum­mer, but I haven’t had my butt in the pool all win­ter so I bet­ter start swim­ming asap! I enjoy set­ting spe­cific goals or chal­lenges so that I have some­thing to work towards and all the train­ing helps to keep me sharp. If you’ve never done a race of any kind, I’d encour­age you to try one. You don’t need to be a high-​level ath­lete to par­tic­i­pate and hon­estly, they’re really fun! (so long as you’re pre­pared going in).

On another note, I thought I’d share with you a few things that have become sta­ples in my fridge and pantry. In oth­er­wards, a few foods that I’ve been eat­ing every day for the past few weeks! I do that often. Today, I picked every­thing up at my local Wal­mart, if you can believe it. Last visit, I picked up a jar of their pri­vate label almond but­ter and was very pleas­antly sur­prised. Plus, the price was great too!

Today though, I bought 4 bags of broc­coli slaw (my new found love!)

A big bag of pre-​cut broc­coli (awe­some for quick stir-​frys, roasted or steamed veg­gies, soups…)

and a bot­tle of the best hot sauce, sir­acha, which I use in just about every­thing! Be care­ful though, it’s hot!

Any­ways, with all those items on hand, I whipped up a deli­cious lunch and was happy, happy!

Here’s what I ate (in case you’re interested).

Egg white omelet with my broc­coli slaw. I just sauteed it in a sprayed pan with minced gar­lic and a few dashes of sir­acha. Yum!

Baby spinach, kale and some left­over quinoa salad, dressed with 1 T lemon-​flavoured fish oil and bal­samic vinegar.
